From reviving British dining traditions to reimagining the neighbourhood restaurant, five names worth knowing and what their next moves could mean for London’s dining scene
Great research and a really interesting read! Love the idea of bringing old British dining rooms and pubs back to life - I do wonder though, as these groups expand, how difficult it will be to maintain that individual character without the restaurants starting to feel like variations of the same concept - do you think there’s a point where growth works against what made them successful in the first place?
Sorry for the delayed response, totally missed this last week! I definitely think growth can dilute a restaurant group, especially when the same restaurant is replicated again and again and quality of food and experience suffer. I do think that restaurateurs can scale successfully however with unique concepts. Pachamama group is a really good at doing this in London. Zephyr, Lagana, Nina, Bottaega and Soraya are all have different concepts but feel related. I think that’s a much stronger strategy than replicating Zephyr 5x over.
